I've visited Peru a number of times and I recall being told that it was Millard Fillmore. Guano was a big deal at the time because of it's importance to agriculture. Don't know about today.

At least it was still a big deal with our Latin teacher. His classroom looked like a jungle and he never failed to praise the penguins' digestive leftovers.

(No clue as for your question, Laurie, as I'd first think of someone Roman-Catholic, but I know it wasn't JFK.)

Good guesses both of you, but not correct. Hint #2 - The number of numerals in the full Roman numeral on the gravestone will tell you which President he was. There are four.

Another good guess, but not correct. Keep eliminating via considering the number of times four Roman numerals are used to give an actual number.
